Lighter Chicken Salad Sandwiches
A few weeks ago I heard that there was going to be a new restaurant opening here in the Phoenix area soon that specializes in all things chicken salad. I have to say – I’m pretty fond of a good chicken salad sandwich and I’ve already told Brian that when it opens we’ll have to go check it out … from what I understand they have more than 10 varieties of chicken salad! Holla!!
Since reading about the restaurant, I have been on a chicken salad kick …. but I wanted to lighten my recipe up a bit! I’m a bit fan of fruits and various textures in my chicken salad. Instead of using traditional mayonnaise, I made it a bit better for you by substituting Greek yogurt. I also swapped out my usual Oroweatยฎ Whole Grains Sliced Breads for the new Oroweatยฎ Healthfullยฎ bread – have you seen it in your local markets? I went with the nuts and seeds variety because it sounded perfect for my Chicken Salad sandwich! ๐
My family loves Oroweatยฎ bread! There are so many great choices that fit all of our needs – we always have a few different loaves on hand! We especially love Oroweatยฎ Sandwich Thinsยฎ Rolls, Oroweatยฎ Whole Grains – 100% Whole Wheat variety and Healthy Multi-Grain variety … and we’re really enjoying the new Oroweatยฎ Healthfullยฎ bread varieties, too!
Here are a few more reasons to love Oroweatยฎ bread:

Sounds good! I like to make tuna salads lighter by using just enough mayo to get a little mayo flavor, then I fill in the rest of the "creaminess" with fat-free sour cream. I assume it would work with chicken salad, too, but I never make it at home. I've tried, but it always tastes like really boring tuna salad when I make it…
Anyway, I love fruit & nuts in my chicken salad, esp. cranberries & sliced almonds! Thanks!

has anyone ever pointed out that those links over to the left for linking/sharing? when you print, they OVERLAP the ingredients list – specifically the AMOUNTS for the ingredients. printer settings do not change this anomaly. i may or may not be alone in this opinion, but if i can’t print out a recipe, i skip it altogether (when i -can- try recipes, i make effort to go back and review/leave feedback, so not just a mealmoocher, lol)! yours is not the only site where this happens, of course, and i think it might just be something to do with the layout of the page itself!

Thank you so much for letting me know! I had no idea those buttons were covering any part of the print page. I have disabled the sidebar link sharing and I do apologize for the inconvenience – and I much appreciate you letting me know this was something that needed to be addressed!

I like to add a little of Marieโs poppy seed salad dressing to give it a sweet tang. And I use slivered almonds instead of pecans… the possibilities are truly endless !
Thanks for this amazing recipe!
