We love burritos at our house. Probably more than I care to admit! As one of our goals for the new year is to eat a little better, we decided to make burritos in a healthier way. All of our favorite ingredients are there but without wrapping it all up in a tortilla, we piled it all into a bowl. And it was delicious!
I was not sure how my kids were going to react to this version of a burrito. They ended up loving it! My five year old said, “Mom, this looks delicious!” I was so excited when he thought it tasted delicious too. Even my three year old liked it! The dressing is one that we love to make for a copycat version of Cafe Rio’s Sweet Pork Barbacoa Salad. We lightened it up for the burrito bowls by using greek yogurt. And it tastes so close to the original recipe! Talk about a win.

Burrito Bowls with Light Tomatillo Dressing
Ingredients
- 1 ยฝ cups brown rice uncooked
- 2 cups romaine lettuce chopped
- 1 can black beans 15.25 oz can
- 1 can sweet whole kernel corn 15.25 oz
- 1 large tomato diced
Light Tomatillo Dressing
- 2 cups greek yogurt
- ยผ bunch cilantro cleaned and pulled from stems
- 1 tomatillo cut into chunks and paper skin removed
- ยผ teaspoon minced garlic
- ยฝ jalapeno seeds removed
- juice of 1 lime
- ยฝ teaspoon salt
- 1 green onion all of the green part
Instructions
- Cook rice according to package directions. Place rice in bowls and top with lettuce, beans, corn, and tomato.
- Prepare the dressing by combining all ingredients in a blender. Drizzle over burrito bowls and serve.
Notes
- Use this dressing on tacos, too!
