Flat Bread Melts
My boys (husband included) love anything to do with BBQ sauce, bacon, and/or ground beef. I think they could eat it every day. Seriously. Don’t get me wrong … I like it too – just not as much as them! 😊
We eat sandwiches at least once a week – when I plan our menu, it’s usually scheduled for Tuesdays.
Truth be told, it’s easy to fall into a sandwich rut. Sometimes, ya gotta think outside of the bun. These flatbread melts made my boys (husband included) go nuts! They *LOVED* them! I felt like a rock star with all the compliments and adoration. I didn’t have the heart to tell them how easy it was. 😉 We’ll leave that as our little secret!
I’m gonna warn you – This “flatbread” is so good. It was so soft and chewy and crispy and yummy. And the best part? It starts with a tube of refrigerated pizza dough! I could have easily made a meal out of just the bread! (Have I told you before that I’m a carb-junkie?!) Seriously, so good!
I can think of a million ways to make flatbread melts using different combos of ingredients. I can be a rock star all the time with all these ideas. We served it up with some fresh broccoli with dip and fresh fruit on the side. It made a quick, satisfying meal the whole family enjoyed!
What to serve with flatbread melts
Since this recipe is quick and easy, I like my side dishes to be quick and easy, too. Sometimes, I will serve things that can be made ahead, like potato salad, macaroni salad, or pea salad. A garden-fresh salad and a side of fruit are one of my favorites because it takes almost no time. Here are a few others:

How to store leftovers
Store the leftover ground beef mixture in an airtight container in the refrigerator for up to 5 days. The flatbreads can be kept in a zip-top bag at room temperature for up to 2 days, or refrigerated for up to 5 days.
How to reheat leftovers
Place the ground beef mixture in a microwave-safe container and heat on half power until heated through, about 3 minutes. The actual time will depend on the amount that needs to be reheated and your microwave.
Reheat the flatbreads in a 300°F oven for 5-10 minutes of until heated through. You can also microwave them on a microwave-safe plate for about 20 seconds.

- vegetable oil – or any oil used for frying.
- refrigerated pizza dough – you can also use homemade pizza dough if that’s your thing!
- ground beef – I prefer to use extra lean ground beef. If you use something else, you may need to drain the grease.
- onion – any kind you prefer or have on hand. Yellow, white, sweet, or red – they all work fine.
- bacon – any kind you like.
- BBQ sauce – use your favorite kind here!
- Cheddar cheese – I prefer a mild shredded Cheddar, but feel free to use whatever you like.

Time needed: 30 minutes
How to make BBQ Bacon Cheeseburger Flat Bread Melts
- Heat oil.
In a skillet, heat a few tablespoons of oil over medium-high. Turn to coat the bottom evenly.
- Cut and fry flatbreads.
Unroll the tube of pizza dough. Using a pizza cutter, cut the dough into 6 to 8 equal pieces. Take one piece of the dough and flatten slightly with a rolling pin or your hands. Add to the pan with the oil. Cook on the first side until browned (about 1-2 minutes) and carefully flip the dough piece over. Cook on the second side until browned. Remove to a paper towel-lined plate to drain. Repeat with remaining dough pieces – add oil as necessary to the pan.
- Prepare the meat mixture.
Meanwhile, in a separate skillet, brown and crumble the beef with onion until meat is no longer pink. Drain if necessary. Stir in the bacon. Add the BBQ sauce to taste (we like ours the consistency of a less messy Sloppy Joe’s). Heat through, stirring occasionally.
- Serve.
To serve, top fried flatbread with beef mixture and cheese.
Recipe Tips
- Change it up by skipping the BBQ sauce and using ketchup and mustard instead!
- Not a fan of onions? You can omit them completely.
- Add pickle slices to your melt or serve a pickle spear on the side for the real cheeseburger experience!
- Feel free to add shredded lettuce or sliced tomatoes when serving.
