Chocolate Covered Rainbow Strawberries are a fantastic treat to have this St. Patrick’s Day. With colorful layers of white chocolate inspired from the rainbow. Trust me the rainbow has never tasted so good.
Chocolate Covered Rainbow Strawberries

Where every 2nd Friday of the month I, Sandra from A Dash of Sanity, will be sharing one of my favorite recipes with the friends and followers of Love Bakes Good Cakes.
I am gearing up for St. Patrick’s Day and one of the treats that we made this year were these adorable Chocolate Covered Rainbow Strawberries. My kids were excited, claiming they could have more than one since it was a “healthy treat”. Right?! Umm, no. With 6 layers of chocolate, I would say this is more a chocolate dessert than a fresh fruit snack. None the less, it is the perfect festive treat and one could say the “pot of gold” would be the strawberry center.
I love making fun recipes for the spring time, especially for the holidays like St. Patrick’s Day and Easter. I have to say that Easter is my favorite holiday to make goodies for. All of the colors are warm and inviting, the flavors fruity and sweet, then of course the salads…oh, my favorite part.
Celebrate the Irish luck with these Chocolate Covered Rainbow Strawberries, trust me they are better than a 4-leaf clover. Enjoy!

Making the Chocolate Covered Rainbow Strawberries
Ingredients:
1 cup Make ‘n Mold Candy Wafers, white1 cup Make ‘n Mold Candy Wafers, red¾ cup Make ‘n Mold Candy Wafers, yellow¾ cup Make ‘n Mold Candy Wafers, green¾ cup Make ‘n Mold Candy Wafers, blue¾ cup Make ‘n Mold Candy Wafers, purple
12 large whole strawberries
Directions:
Line a baking sheet with parchment paper, set aside. Melt white candy wafers per package directions. Hold the strawberry by its stem and dip into the white chocolate, lift & slightly twist the strawberry, letting any excess chocolate drip back into the bowl. Set on parchment paper, and repeat with the remaining chocolate & strawberries. Let the strawberries rest for 10 minutes, allowing the chocolate to completely harden & set. Next, melt red candy wafers per package directions. Hold the strawberry by its stem and dip into the red chocolate, cover 90% of the
white chocolate, lift & slightly twist the strawberry, letting any excess chocolate drip back into the bowl. Set on parchment paper, and repeat with the remaining chocolate & strawberries. Let the strawberries rest for 10 minutes, allowing the chocolate to completely harden & set.
The layers
Melt yellow candy wafers per package directions. Hold the strawberry by its stem and dip into the yellow chocolate, 75% of the red chocolate, lift & slightly twist the strawberry, letting any excess chocolate drip back into the bowl. Set on parchment paper, and repeat with the remaining chocolate & strawberries. Let the strawberries rest for 10 minutes, allowing the chocolate to completely harden & set.
Melt green candy wafers per package directions. Hold the strawberry by its stem and dip into the green chocolate, 75% of the yellow chocolate, lift & slightly twist the strawberry, letting any excess chocolate drip back into the bowl. Set on parchment paper, and repeat with the remaining chocolate & strawberries. Let the strawberries rest for 10 minutes, allowing the chocolate to completely harden & set.
Melt blue candy wafers per package directions. Hold the strawberry by its stem and dip into the blue chocolate, 75% of the green chocolate, lift & slightly twist the strawberry, letting any excess chocolate drip back
into the bowl. Set on parchment paper, and repeat with the remaining chocolate & strawberries. Let the strawberries rest for 10 minutes, allowing the chocolate to completely harden & set.
Last but not least
Last layer, melt purple candy wafers per package directions. Hold the strawberry by its stem and dip into the purple chocolate, 75% of the blue chocolate, lift & slightly twist the strawberry, letting any excess chocolate drip back into the bowl. Set on parchment paper, and repeat with the remaining chocolate & strawberries.
Let the strawberries rest for 30 minutes, allowing the chocolate to completely harden & set. Now they are ready to serve. Every bite you are guaranteed to get every color of the rainbow.
