My family eats a lot of chicken so I’m always looking for new ways to prepare it. This recipe was an instant hit and I’m already planning on making it again next week.
Although this recipe is baked, you certainly can grill it if you prefer. Either way, I predict your family will enjoy this as much as mine!
Chicken Skewers Marinade
For this recipe, plain yogurt and olive oil combine with lemon and lime zest, garlic, onion powder, salt, pepper, and rosemary. Marinating in a yogurt-based marinade produces a juicy, tender, and delicious chicken recipe.
What goes with Chicken Skewers
One of our favorites is skewered vegetables. This recipe suggests cherry tomatoes, peppers, and onion. However, you can use whatever your family enjoys. Some rice or couscous is also a great accompaniment. Here are a few more ideas:

UNCOOKED: Covered and refrigerated, this recipe needs to be cooked within 24 hours.
COOKED: Store any leftovers in a covered air-tight container for up to 3-4 days.
MICROWAVE: Place the leftovers on a microwave-safe plate and microwave in 30-second increments, allowing the meat to rest for 20-30 seconds before checking. Continue this until all of the meat is heated through, taking care not to overheat it.
OVEN: Wrap the kebabs in aluminum foil. Bake in a 300°F oven for 25-30 minutes or until heated through.
STOVETOP: Heat a skillet over medium-high heat. Stir-fry the meat until it is completely heated through. Use caution not to overcook the meat.
I would plan on using this recipe within 24 hours.
Recipe Tips
- If desired, for the last 5 minutes of the baking time, you can switch it over to the broil setting to brown the chicken more. Keep an eye on it, so it doesn’t burn.
- Although this recipe tells you how to bake the chicken, feel free to grill the skewers if you prefer!

Ingredients
- 1 pound boneless skinless chicken breast
- ½ cup plain yogurt
- ½ cup olive oil
- 2 teaspoons onion powder
- 2 cloves garlic minced
- 1 teaspoon lemon zest
- 1 teaspoon lime zest
- ½ lemon juiced
- ½ lime juiced
- salt and black pepper to taste
- 2 sprigs fresh rosemary chopped
- 16 pieces cherry tomatoes
- 2 peppers chopped
- 1 red onion cut into wedges or pieces

Instructions
- In a large bowl, thoroughly combine the yogurt, olive oil, onion powder, garlic, lemon and lime zest, lemon and lime juice, rosemary pieces, salt, and pepper.
- Add the chicken pieces to the yogurt mixture. Mix well and let it rest in the refrigerator for at least 30 minutes.
- Preheat the oven to 350°F. Place a cooling rack over a baking sheet and spray it with cooking spray.
- Skewer the tomatoes, peppers, and red onions. Skewer the marinated chicken meat. Place all the skewers on the cooling rack.
- Place the baking sheet in the oven and bake for 20-25 minutes or until the chicken is no longer pink.
- Serve with yogurt.
