This Black Bean and Corn Salsa is such a versatile recipe. It’s great for parties when you need an appetizer idea – just mix it up and serve it with tortilla chips! We have a big (end of summer, hello football season) party coming up in September and this will be one of the dishes we serve! It’s always a hit with guests!
This Black Bean and Corn Salsa also makes a great addition to dinner when you use it as a salsa on top of fish, chicken, pork, or beef. One of my favorite ways to use this salsa in a meal is with tortilla-crusted fish or chicken and to serve it with a side of Mexican Rice or Cilantro-Lime Rice. It makes for a simple and delicious dinner idea!
To make this Black Bean and Corn Salsa, you’ll start by adding the beans and veggies to a big bowl. Aren’t they so pretty together?! I love all the different colors and textures!
Next, whip together the simple dressing. Be sure to give it a taste and add more salt and/or pepper, if necessary.
Pour the dressing over the beans and veggies in the bowl and give it a stir. For better flavor, you’re going to want to let this Black Bean and Corn Salsa chill in the fridge for a bit. Give it a good stir again just before serving. Mmmmmm!

Black Bean and Corn Salsa
Ingredients
- 1 can (15 oz.) black beans drained and rinsed
- 1 can (15 oz.) corn drained and rinsed
- ยผ medium red onion chopped
- 1 red bell pepper chopped
- 3 tablespoons green onions chopped
- ยผ cup cilantro chopped
- ยผ cup extra virgin olive oil
- 2 limes juiced
- ยฝ teaspoon dried oregano
- ยฝ teaspoon smoked paprika
- salt and Pepper to taste
Instructions
- Place black beans, corn, red onion, red bell pepper, scallions and cilantro in a large bowl. Mix thoroughly, set aside.
- Add extra virgin olive oil, lime juice, dried oregano, smoked paprika and salt and pepper to a medium bowl. Mix well until all ingredients are well incorporated.
- Pour liquid mixture over salsa and mix thoroughly so the salsa is evenly coated. If desired, add additional salt and pepper, to taste.
- Cover and refrigerate for at least one hour before serving.
Notes
- Don’t like the bite of red onion? Use white or yellow.
- No smoked paprika? Try regular.
