Pineapple Mojito
You guys, I am all about the fruity drinks when summer rolls around. How about you? I’m excited to share your new favorite summer cocktail. This Pineapple Mojito is bright, citrusy, cool, refreshing, and absolutely delicious!
We love to have friends and family over for summer cookouts and swim parties. As a host, I try to keep plenty of beverage choices on the menu – and one of my new favorites is this Pineapple Mojito! It’s been a big hit with guests as well!
I’m a big believer that everyone at a party should have fun drinks. Why shouldn’t designated drivers, people who choose to abstain from alcohol, pregnant women, and kiddos not have fun drinks, too?
How do I make a non-alcoholic version of Pineapple Mojito – aka Pineapple “Nojito”?
Where the recipe calls for rum, substitute lemon-lime soda (such as Sprite, 7Up, etc.) or chilled grape juice.
To make this Pineapple Mojito cocktail, add the mint simple syrup to the bottom of a glass.
Muddle the mint leaves with a standard muddler, pressing with downward and twisting turns to release the oil from the mint leaves.
Add the Blanco rum and pineapple juice.
Using a long-handled bar spoon vigorously mix the ingredients for thirty (30) seconds.
Now add the ice until the glass with halfway filled with ice, top with tonic water and serve.
How do you muddle?
- Be sure to choose a sturdy glass as you do not want to chip or break the glass.
- Add the ingredients to be muddled to the bottom of the glass.
- Place the muddler in the glass. Press down lightly and give it a few gentle twists. You want to release the flavor from whatever is being muddled – you DO NOT want to pulverize it.
- When you can smell the mint (or whatever in being muddled), you are done.
How can I muddle my drink if I don’t have a muddler?
Ideally, you want a small, flat tool that is gentle. The end of a wooden spoon, or the end of a French rolling pin (the kind without handles). Really, you are just extracting the flavor from the mint leaves (or whatever you are muddling) – you are not trying to pulverize them.
All this talk of drinks, I need to go make myself another one of these Pineapple Mojitos! Mmmmmm!

- 1 ounce mint simple syrup
- 4 large fresh mint leaves
- 1 ยฝ ounce Blanco rum
- 2 ounce tonic water
- 3 ounce pineapple juice
- 2 – 3 pineapple chunks for garnish

Instructions
- To make the cocktail add four (4) large mint leaves and the mint simple syrup into the bottom of the glass, muddle the mint leaves with a standard muddler, pressing with downward and twisting turns to release the oil from the mint leaves. Once this is finished add the Blanco rum and pineapple juice.
- Using a long-handled bar spoon vigorously mix the ingredients for thirty (30) seconds. Now add the ice until the glass with halfway filled with ice, top with tonic water, and serve.
