I know it’s hard to think about right now, but soon, it will be the time of year when many of us will get together with our favorite people, and many of us will attend holiday office potlucks, too. I don’t know about you, but I always have the hardest time deciding what to take. Part of my problem is, that I don’t want to take what everyone else is taking, but I want to take something I know people will love!
At almost every party or potluck I go to, it seems like people always hover over and keep going back to the dips. Maybe it’s the fact that the flavor possibilities are endless – or maybe it’s just that it is a great potluck or party food?!
One dip my family loves during the holidays, during football games, or at a backyard BBQ in the summer, is this super simple Buffalo Chicken Dip. Since it’s a winner with them, I figured it’d be a crowd-pleaser with everyone else, and I was right! Parties and potlucks ADORE this dip!
One of the great things about this recipe is it can be made in a slow cooker – making it perfect for office parties in particular. It stays warm until needed and a slow cooker makes it easy to transport. It can also be made in the oven for those times when you’re hosting a get-together at home.

Ingredients
- cream cheese, ranch dressing, buffalo sauce – this is the base of your dip, providing the most cheesy-buffalo-y flavor!
- cheddar cheese – more cheesy goodness! You’ll add half of it into the dip directly and use the other half to top the dip.
- chicken – cooked and chopped. It isn’t buffalo chicken dip without it! Chicken breasts are the best cut for this recipe.
- parsley – chopped. An optional topping for the dip once it’s done, but it adds a little something!
- crackers or celery – or whatever you like to eat with your dip!
Equipment
- electric mixer – for mixing some of your ingredients and for beating the cream cheese until it’s smooth.
- 8×8 or 9×9 baking dish with cooking spray – if you’re cooking this in the oven, grab one of these!
Note: You can make this dip in the oven or with a slow cooker. Both ways it comes out tasty!

- 2 packages cream cheese, softened 8 oz. each
- 1 cup prepared Ranch dressing
- ¾ cup Frank’s Red Hot Wings Buffalo Sauce
- 2 – 3 boneless skinless chicken breast halves cooked and chopped
- 1 ½ cups shredded Cheddar cheese divided
- 1 bunch celery cut into 4-inch pieces
- assorted crackers Ritz crackers, Wheat Thins and Triscuit are great!

Instructions
OVEN DIRECTIONS
- In a large bowl, beat the cream cheese with an electric mixer until smooth.
- Add the Ranch dressing and buffalo sauce; mix well.
- With a spatula, stir in half of the cheese and all of the chicken.
- Transfer the mixture to an 8×8-in. or 9×9-in. baking dish sprayed with cooking spray. Top with the other half of the cheese.
- Bake at 400°F until hot and bubbly, about 20 minutes.
- Sprinkle with chopped parsley, if desired. Serve with assorted crackers and celery sticks.
SLOW COOKER DIRECTIONS
- In a large bowl, beat the cream cheese with an electric mixer until smooth.
- Add the Ranch dressing and buffalo sauce; mix well.
- With a spatula, stir in half of the cheese and all of the chicken.
- Transfer the mixture to a slow cooker sprayed with cooking spray.
- Top with the other half of the Cheddar cheese.
- Cover and cook on LOW until hot and bubbly, about 3 hours.
- Sprinkle with chopped parsley, if desired. Serve with assorted crackers and celery sticks.
Notes
- If you prefer a thinner dip, add a couple of tablespoons of milk to the mixture before baking.
- Refrigerate any leftovers in an airtight container for up to 5 days.
- You can also freeze it in an airtight container for up to three months. Allow it to that completely before baking as directed.
- I do NOT recommend using any low-fat products for this recipe. They tend to not mix as well as their full-fat counterparts, and the final product usually ends up with a weird texture that most people don't like.
