I have had a major sweet tooth for the past few days, and it really sucks when you are trying to behave diet-wise! While I have been doing pretty well with not giving in, I could not resist any longer! Now, I have tried different fruit to satisfy the sweet craving but letโs be honest, when you want a cookie, fruit is just not the same!!
These Red Velvet Cookie Bars really hit the spot in that regard. I kept thinking about cookies and seeing all things red velvet, and it just made me want to put them together! Technically, I vowed I would make something but only have a little taste of it, ya know, for quality control purposes! But I did eat one tiny little red velvet bar square. Just a little one!
And hereโs the thing, Iโm good for now. That little piece was just enough to make me feel like I wasnโt depriving myself of something! I hope you enjoy these bars as much as my family and I did!

Ingredients
- red velvet cake mix, eggs, and vegetable oil – generally, this is what youโll need to make the dough. Be sure to read the instructions on the box!!
- oreo cookies, chocolate chip cookie dough bites, cookies โnโ creme bars – all chopped and broken up into pieces. These will be your oh-so-delicious toppings.
- sweetened condensed milk – another topping that gives the bars an additional bit of sweetness.
Equipment
- 9×13-inch baking sheet – lined with aluminum foil or parchment paper and sprayed down with cooking spray.
- large bowl and wooden spoon or spatula – to mix your dough.
How to make Cookie Lovers’ Red Velvet Bars
First, prep your supplies. Preheat your oven to 350ยฐF and line a 9×13-inch baking sheet with parchment paper or aluminum foil, allowing the edges to overhang slightly. (This will make it easier to get the bars out later!!) Spray the baking sheet lightly with cooking spray and set it aside.
Second, mix your dough. Place the cake mix, oil, and eggs in a large bowl and mix with a wooden spoon or rubber spatula until itโs well combined. With clean hands, press the dough evenly into the prepared pan.
Third, bake your bars and add the toppings. Bake the dough for 10 minutes. Remove the pan from the oven and immediately top with Oreo cookies, cookies ‘n’ creme bars, and the chocolate chip cookie dough bites. Drizzle the sweetened condensed milk over the top, evenly covering the bars.
Finally, bake your bars a second time and enjoy! Return the pan to the oven and bake for an additional 12-15 minutes. After that, allow the bars to cool on a wired rack completely before removing them from the pan to serve. Cut them into squares, and chow down!!
