Rainbow Fruit Salad with Honey Citrus Dressing
I have been wanting to share this yummy Rainbow Fruit Salad with Honey Citrus Dressing for awhile now – and I am finally doing it today!! *happy dance* If you follow me on Instagram or Facebook, you may have already seen a sneak peek for this fruit salad! I have to tell you, although my kiddos are pretty good eaters, it’s fun to change things up once in awhile, and what is more fun than a colorful bowl of yummy fruit and pancakes with sausage on a stick?!
After hearing so many stories from other moms, I have to say that I feel very blessed that all of my kiddos willingly eat an assortment of fruits and veggies. Getting them to “eat the rainbow” is usually pretty easy. My husband, on the other hand …. eh, yeah. That’s another story! I’m still working on that one! ๐
Like many of you, things are starting to get crazy in the Love Bakes Good Cakes house. Summer is coming to a close and we’re trying to get the last little bit of fun in before it’s back to the books! Some of the schools here in the Phoenix area are starting back to school next week!! Can you believe that?! Since we homeschool, we won’t be starting that early! Oh, no! We’ll squeeze out the last few weeks of summer before we have to give in and get back to the grind! With all of this talk of back-to-school, I can’t help but think of how fast the weeks of summer have slipped by! Seriously, where did they go?!
As much as I haven’t wanted to, I finally got the curriculum ordered for next school year. I even bought Abby a few workbooks so she can “do school” too! With curriculum comes the back to school supplies. Am I the only person who hates back-to-school shopping?! Ugh.
Foster Farmsยฎ Pancake Wraps
A few weeks ago, I was doing my regular grocery shopping and picking up a few last-minute back-to-school items at Walmart. Thank goodness for one stop shopping! While getting groceries, I ran across Foster Farmsยฎ Pancake Wraps. Have you ever heard of them? I have been oblivious all of this time! My kids love corn dogs – that’s what I was looking for when I noticed the breakfast version. I knew my kiddos would love them! Since I was planning on making my Rainbow Fruit Salad with Honey Citrus Dressing, I knew the Foster Farmsยฎ Pancake Wraps would be the perfect accompaniment for a fuss-free and easy breakfast! Not to mention, once the kiddos do go back to school, having the Foster Farmsยฎ Pancake Wraps on hand will mean breakfast will be one less battle for me to have to fight! Amen. Truthfully, my kiddos love having something other than cereal for breakfast!
You can choose from two great flavors – Foster Farmsยฎ Pancake Wraps Original Sausage and Pancake or Sausage and Pancake Bacon, Egg and Cheese. Since discovering them, Foster Farmsยฎ Pancake Wraps makes a regular appearance in our house because they make breakfast easy! Not to mention, they pair nicely with my Rainbow Fruit Salad with Honey Citrus Dressing! Making the fruit salad early in the week plus having the Foster Farmsยฎ Pancake Wraps on hand makes breakfast the easiest meal of the week!
Before you hit the store, be sure to download the Ibotta coupon app if you don’t have it already! Then log in to get your “Buy 1 package of either variety and get $1.00 off” coupon when you purchase Foster Farmsยฎ Pancake Wraps. You must sign up for Ibotta to unlock the coupon! Ibotta is a great app to use because it pays you real cash money wherever, whenever you shop – for things you normally buy! The best thing? It’s free!!
I should note that this fruit salad works with almost any kind of fruit your family likes! If you prefer raspberries over blueberries, by all means switch them out! If clementines are on sale that week, use them in place of oranges! Your kiddos only eat green grapes? Not a problem! Maybe you prefer peaches over apples – that’s okay too! This recipe is great in the fact that it is easy to customize and it still turns out delicious!
I’ve shared my Rainbow Fruit Salad with Honey Citrus Dressing with you and showed you how we love to pair it with Foster Farmsยฎ Pancake Wraps – what is one of your family’s favorite breakfast meals?

This is about the prettiest fruit salad I've ever seen and the dressing sounds irresistible!

This looks great. If I made this do I have to worry about the fruit going brown. I need recipes for a baby shower and I would love to make this.
Tina
Does the dressing have a strong honey taste? If it does, could another natural sugar be used?
Jamie
I think it depends on the kind of honey you use – some varieties taste stronger than others. I used local honey and didn’t find it overpowering.

This fruit salad looks delicious and i will make it as soon as the local strawberries are available. But the pancake wraps ? Omg……they do not look any healthier than corn dogs. Wit all the info on the net …..everywhere…….it is amazing that people are still giving there kids corn dogs. I never bought those…..thought they were junk food.

thanks for the recipe – it was delicious. Next time I am going to switch the lime zest for mint
