Summer is flying by, isn’t it?! I just realized that we’re already into the middle of July – and I feel like Summer just started! *sigh* I need a “do-over” so I have more time to enjoy the season! Anyone with me?!
One of my favorite things about Summer (besides the awesome weather, of course!), is all of the yummy no-bake treats and the abundance of fresh fruit! I have to admit – I like no-bake treats in the Winter, too. I’m kinda lazy like that! ๐ All of the deliciousness without all of the work!
Since I’m such a huge fan of Dove Dark Chocolate, I wanted to create a super special Summer dessert. Although it sounds complicated, I assure you, it’s not! This Chocolate Banana Strawberry Ice Box Cake is perfect for get-togethers with family and friends! This icebox cake is the perfect way to put a twist on a Summertime classic with Silky Smooth Dove Dark Chocolate!
Pairing Dove Dark Chocolate with Keebler Graham Honey Crackers seemed only natural! Add some fresh fruit and you have an easy Summer dessert everyone will love!!

Chocolate Banana Strawberry Ice Box Cake
Ingredients
- 15 oz. Dove Dark Chocolate, chopped about 1 1/2 (9.5 oz bags)
- 5 large egg yolks
- Pinch salt
- 3 cups heavy cream
- 3 – 4 ripe bananas peeled and chopped
- 16 oz. strawberries hulled and chopped
- 2 sleeves Keebler Honey Graham Crackers, crushed into crumbs from a 15 oz. box
- Sweetened Whipped Cream optional
- Additional banana and strawberry for garnish if desired
Instructions
- Line a bread pan with plastic wrap. Set aside.
- Place the chocolate in a heat-proof bowl; set aside. Place the yolks with a pinch of salt in a separate heat-proof bowl; set aside.
- In a medium saucepan, heat the cream over medium-low heat just until it simmers. Slowly pour the cream into the yolks, whisking constantly. Once all of the cream is incorporated, return the mixture to the saucepan and set the heat to low. Cook, stirring constantly, until the mixture is thick enough to coat the back of a wooden spoon – about 8 minutes. Do not let the mixture come to a boil. Immediately strain the cream mixture through a fine mesh sieve into the chocolate. Stir until the chocolate melts and is smooth. Refrigerate the chocolate, stirring occasionally, until it is thick – about 4 hours.
- Once the chocolate is cooled and thick, spread 1 cup of the chocolate mixture onto the bottom of the prepared loaf pan. Top with one-fourth of the graham cracker crumbs. Top with a third of the remaining chocolate, followed by one-third of the bananas and strawberries. Repeat with remaining graham crackers, chocolate, bananas and strawberries until you reach the top. End with graham cracker crumbs.
- Cover the cake with plastic wrap and refrigerate overnight. Uncover and turn the cake out onto a serving platter. Remove the plastic wrap from the outside of the cake. Garnish with whipped cream and additional bananas and strawberries, if desired. Cut the cake into slices to serve.
Notes
- You can use other plain cookies in place of graham crackers.
