Crispy Pesto Gnocchi with Tomatoes, Black Olives and Feta Cheese
Oh.My.WOW!! This stuff is *so* good! It tastes fancy … but is so simple! I found the recipe at 1 Cup Awesome (adapted from Rachel Ray Magazine) and adjusted it to my family’s tastes and preferences. It was a fantastic meatless meal – and we’re already planning on making it again – soon!!! Seriously, pin this now!

Crispy Pesto Gnocchi with Tomatoes, Black Olives and Feta Cheese
Ingredients
- A few swirls of olive oil
- 1 package potato gnocchi 16 oz.
- ยฝ pint grape tomatoes halved
- ยผ cup prepared pesto sauce more to taste
- ยผ cup black olives halved
- Feta cheese crumbled
Instructions
- Heat olive oil in a skillet over medium-high heat. Add gnocchi in a single layer and cook until browned, about 4-5 minutes. Turn gnocchi and cook, tossing occasionally, until browned to your taste. Add tomatoes and olives, cook for about 2 minutes. Remove from the heat and add pesto and crumbled Feta. Stir.
- Serve immediately!
Notes
- This is the perfect meatless meal on its own, but feel free to add chopped cooked sausage if desired.

Bummer – wish I would have seen this before my daughter and I made our homemade gnocchi last week. Well, I guess we'll have to make them again so I can make them crispy – yummmm. Stop by in a few days for our gnocchi tutorial.

A friend gifted me some delicious pesto she had made, so I searched the web and your recipe appealed to me the most. I made this yesterday for dinner. It was soooo good! I had all the ingredients, and this was fast and easy. I froze two portions for future work lunches. I would say this is definitely company-worthy, served with a big salad and garlic toast. Yum!
